when i log-in to a game with mudfish on, will the server detect a different ip address from the ip address i have when mudfish is off?

Yes because basically using mudfish node means that it changes the public IP address.  So in a view of the game server, they’ll see two different public IP (one with Mudfish and one without Mudfish).
